 Did You Know...
Baking: Proper baking will aid you in getting good hinge cuts.

Underproofed or underbaked bread will make a lousy sandwich.

Bake an Italian tray as you bake the new gourmet bread. Otherwise its hard to know how long to bake them a proper golden brown. Parmesan/ Oregano will normally look dark and Hearty Italian will look light.

Oven:

Replace worn out oven hinges and adjust latches if you want good bread.

If your bread storage cabinet does not seal tightly, you will end up selling hard bread.

Order retro kit from Nu-Vu to get a better latches and to seal cracks in the cabinet.

Keep bread cabinet tightly closed.

Keep it fresh: move all baked bread down and place two empty trays above it to keep the air off it.

Bread:

Don't ask "wheat or white" say: "would you like to try one of our new gourmet breads today?"

Be careful to determine "Italian" (formerly white) from "Hearty Italian".

Score the bread at the correct 45 degree angle.

Old bread does not hinge cut well without ripping... Answer: Bake the correct amount.

Never bag bread. It has too much trapped moisture and will not work with the new cut.

Display:

With flat sneeze guard, use the 2 black clips to hold the bread forms to the wicker basket and Velcro the wicker basket to plexiglass holder and the holder to the glass.

Make sure you post the "changed our cut sign" so customers know what's going on.

Hinge Cut:

Must be cut at a 45 degree angle. NEVER LIKE A HOT DOG BUN.

Order the new knifes, the old Alfi knives mangle the bread.
